Il pesce destinato a essere consumato crudo è sottoposto a trattamento di bonifica preventiva conforme alle prescrizioni del regolamento CF 853/2004 allegato III, sezione VIII, capitolo 3, lettera D, punto 3. Il nostro pesce è acquistato fresco e poi abbattuto a -40° con abbattitore di temperatura o surgelato direttamente a bordo.
